I am giving this recipe for my aunt ( well technically she is my aunt but is really more of a friend) here in North Carolina.The first time when I mentioned this dish to her,she asked what? what is that? She found the name of the dish really funny and we both laughed a lot about her reaction to it and still find it hilarious when we recall that day.She mentioned earlier this week that maybe this should be the next recipe on this blog. Ingredients and method to make hand crafted Mexican beans.
2 1/2 cups pinto beans to be soaked with 1/4 tsp of baking soda overnight in more than double the water.
2 1/2 tsp hot taco mix powder
1/4 tsp cumin powder
1/2 tsp chili powder
1 tsp ground garlic
1 large yellow onion or 2 medium yellow onions finely sliced.
1 tbsp oil
salt to taste.
cilantro for garnish.
1.Place a pan on the stove,heat, pour oil,put in the sliced onions and fry till transparent.
2.Put in the ground ginger,the cumin powder,the chili powder and the taco mix and stir for a minute.
3.Add the beans and the salt and some water and simmer for a while.
4.Keep checking from time to time adding water as needed.
5.It takes about an hour for the beans to cook completely.In a pinch the beans can be pressure cooked in a cooker and then added after the spices are stirred in.But I find that the taste is enhanced when the beans are simmered slowly on the stove.
6.Garnish with cilantro
Serve with flavored tortilla or plain tortilla ,salsa and sour cream or with any rustic bread and chewy bread.
