Ingredients amd method to make the instant uttappam
1 cup rawa (cream of wheat or semolina)
1/2 cup maida (all purpose flour)
1/2 cup rice flour
1 onion finely chopped
1 tsp mustard seeds
1 tsp channa dhal (split yellow chick pea)
salt to taste
4 -5 tsp chopped cilantro
sesame oil or any other oil a little
Mix the rawa and the flours in a large bowl.Add salt to it and mix well.Add water until it becomes a thick batter of dropping consistency .Keep aside
Heat oil in pan,add the mustard seeds to it, when it splutters, add the chana dhal and saute until it turns golden brown.
Add the onions and saute until transparent and then add this to the batter.Add the cilantro and mix well
Heat the tawa/griddle and pour a small quantity of the dough on it and smear slightly to make a slightly thick pancake sized uttappam.
Add a few drops of oil to the side facing up.Flip over after a few minutes and cook the other side.
Serve hot with chutney of choice
Notes:
In case you want to make this spicy, small green chillies can be slit and cut very finely and added to the oil just before the onions.
If you want to increase the veggies in this, grated carrots or peas can be added after the onion and sauteed until slightly soft.
This tastes very good when paired with the peanut chutney
