Low Fat Ginger Cookies

For some time now I have been wanting to try my hand at baking ginger cookies.I had this bookmarked recipe that I decided would be a good place to start.Conveniently on my last trip to Trader Joes I had purchased some smooth crystallized ginger pieces that I thought would work well in the recipe as well.

I adapted this recipe that I found on cooking light and made these cookies. They were tasty and nice. I purposely used lesser quantities of crystallized ginger than was suggested in the recipe since I do not like overwhelming ginger flavor in my cookies. This was also the first time I tried using agave nectar to sweeten cookies and I was very happy with the way it works.Agave nectar is a natural sweetener with a low glycemic index making it a healthier option than using sugar.



Ingredients and method to make the ginger cookies
2 tbsp chopped smooth crystallized ginger
1 cup whole wheat flour (unbleached flour)
1 cup all purpose flour
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp ground ginger
1 tsp baking powder
1/4 cup agave nectar
1/3 cup sugar
2 tsp vanilla extract
1/4 cup oil
1/3 cup unsweetened applesauce
2 tbsp half and half (or milk)
Yielded about 22 cookies

Preheat oven to 375 deg F

Mix together the whole wheat flour and the all purpose flour.

Add all the dry ingredients to this and mix well.

Add all the other ingredients and mix well.

Line a cookie sheet with parchment paper.

Make little lime sized balls of the dough place on the lined cookie sheet about an inch apart and flatten slightly.

Score the top with the back of a fork if you want.

Bake for 15 to 20 minutes until it gets brown.

Cool on a wire rack and store in an airtight container

Notes:

With the proportion of sugar and agave nectar that I used the cookies turned out mildly sweet. Increase the quantity of sugar if you like your cookies very sweet.

In case you use only sugar and no agave nectar than you may need to increase the quantity of milk slightly in order to get the required amount of moisture to the cookie dough.

Those look like the perfect soft ginger cookies. I don't like sweets that are too sweet, so I really enjoy baking with agave.
