I am a huge sucker for Thai food and would surely love a bowl of your soup now!<br />A quick note-- the Thai Curry paste sold in stores is usually not vegetarian because it contains fish sauce. You probably already checked the label to verify that, but I thought I&#39;d point out just in case.

I too avoid making thai dishes at home as lemongrass and other authentic asian ingredients are not common here, never tried making soup with ready made thai curry paste..lovely idea and your soup looks welcoming especially in winter :-)
