Lentil Roti

I have had this posting of lentil roti ready to post for more than a week now and for some reason or the other have not been able to post the same. Finally today I decided that I would not procrastinate further and would post this recipe immediately.

This lentil roti is a regular in my kitchen and is simple and easy to make, very tasty and packed with nutrition and an excellent source of protein too.Being a vegetarian I look to include more protein in my diet and I find that this is a good way to incorporate a little extra protein in a simple way.

The flavors in this roti are not overwhelming, so this roti works well in combination with all the usual gravy curries and raitas.

Ingredients and method to make the Lentil Roti

1 1/2 cup wheat flour
1/3 cup moong dhal (split green gram lentil)
1/3 cup channa dhal (split yellow chick pea)
1/3 cup tur dhal (split red gram lentil)
1 3/4 cup water
1/2 tsp ajwain (carom seeds)
1/2 tsp ginger paste
1 tsp green chilli paste( or according to taste)
2 tsp lemon juice
salt to taste
small pinch of turmeric(optional)
a little oil or ghee to cook the roti

Wash all the three lentils together, drain, add the water and pressure cook the lentils in a cooker until soft.Keep aside to cool.Mash the lentils.

Add the flour into a large bowl, add in the ginger paste, the green chilli paste, the lemon juice, the ajwain seeds, the salt and mix into the flour.Add to this the cooled cooked mashed lentils and make a soft dough.Do not add water until absolutely required. With these proportions the dough came out perfectly with no added water.

Keep aside for about fifteen minutes

Roll into lemon sized balls and roll out into thin circles to form roti's

Heat tawa/griddle and cook the roti applying a little oil/ghee on each side

Serve hot with raita or gravy curry of choice.
