Nan khatai (Indian style cookies) as a weekend treat

Nan khatai is a style of cookies made in India that are available in most bakeries there.These are also sold by a vendor (whom we referred to as the khari wala) who arrives right at your doorstep at least once a fortnight bringing a lot of baked stuff like nan khatai and khari that make excellent tea time and anytime snacks.I have been wanting to make these at home for a long time now but have never gotten around to it.

Finally after researching a lot of recipes on the internet and my cookbooks I arrived at a recipe that was adapted from two or three of them.It turned out to be really simple to make and the final product was crunchy and tasty.I just felt that it was a bit sweeter than I expected it to be,probably the next time I make this I may reduce the amount of sugar slightly.

Ingredients and method to make Nan Khatai

1 cup all purpose flour (maida)
1 heaped tsp baking powder
1/2 cup sugar
1/2 tsp powdered cardamom
a small pinch saffron
1/3 cup melted butter
3 tbsp milk

1.Preheat oven to 375 deg F

2.Mix the all purpose flour,sugar,cardamom and saffron.

3.Pour the melted butter into it and mix well.It would probably still be a bit dry.

4.Add the milk one tablespoon at a time mixing well in between.Once the dough is ready, roll into small lemon sized balls and place on cookie sheet lined with parchment paper

5.Place each ball of cookie dough at least an inch apart so that there is space for them to spread.

6.Bake for about 20 minutes or so until golden.

Yields about 12 cookies.Cool and serve.This can be stored in an airtight container for a few days.

These buscuits are my all time favourite,wanted to try baking this for a long time, till now dint get the appropriate reciepe for baking .. these nankatai or butter buscuits as we call back home in india.
After seeing ur photos I just want to bake them and eat. will let u know the end result...
