Peas and potatoes curry (Aloo Matar masala)

Potatoes and peas are such a classic combination in curries, don't you think ? I feel like I have tasted myriad versions of this combination in different curries over the years, every family seems to have quite a few variations of this combination that they make regularly. I've even made quite a few variations of this combination myself, surprisingly only a couple of the variations I make have made it into this space. This first one that I feel like I posted ages ago, which has potatoes and peas with a slightly unconventional spice mix made of quinoa, flax and sesame seeds among other things. And this second curry with gravy,  which has a more classic and conventional combination of spices that works great with any kind of flat bread or rice variety.

Recently when I was glancing through a cook book by Nita Mehta, I noticed that she had made a stir fry variation of green peas curry using tandoori masala as one of the spices. This kind of intrigued me, tandoori masala in a curry. Hmmm........... :) Since the only way to know how this would taste is to try it, I did,  and liked it a lot. Tandoori masala gives this curry a very unique and interesting flavor. I baked the potatoes instead of frying/ shallow frying to cut some calories and made this curry with some gravy. This is a simple and quick curry to make and tastes great with both rotis/ phulkas or with plain rice or flavored rice. This time I made it to go with some mushroom pulao (will post the recipe for that too soon)  and the combination was pretty good :)

Peas potato curry- Aloo matar masala

Ingredients and Method to make peas curry
2 large onions cut fine
7 to 8 small potatoes cut into 1 inch cubes
3 medium tomatoes cut fine
4 cups frozen green peas 
2 Thai or Indian green chilies cut lengthwise (or to taste)
2 tbsp oil + a little extra to brush on the potatoes
1 tsp cumin seeds
1 tsp finely grated ginger
1/2 tsp minced garlic
salt to taste
1/2 tsp garam masala (or to taste, can be substituted with any other curry powder )

1 tsp tandoori masala powder (available in most Indian grocery stores)

Pre heat oven to 425 deg F. Line a tray with parchment paper and keep aside. Place the cubed potatoes on the lined tray and brush with oil, place in oven and bake for 20 to 25 minutes until potatoes turn creamy golden.

Heat oil in a heavy bottomed pan. Add cumin seeds, when the seeds sizzle, add green chilies and stir a few times. Then add onions and saute until onions turn transparent. Add ginger and garlic and stir a few times. Then add tomatoes and cook until tomatoes turn soft and mushy.

Add garam masala and tandoori masala and stir a couple of times. Add green peas, salt to taste, water as required and allow the green peas to cook until soft.

Add the baked potatoes, add water as needed to achieve required consistency and allow to simmer for a couple of mins for the flavors to mingle.

Remove from heat and serve hot with phulkas/ rotis/ parathas/ naan/ kulcha (Indian flat bread) or on a bed of plain steamed rice or any kind of flavored rice. (This time I served this curry with mushroom pulao )

Potatoes and Peas curry ( Aloo matar )

There is something about potatoes,it is always well liked and well recieved by people of all ages. As a result when I am entertaining and in doubt as to what the guests will like I try and include at least one dish with potatoes and find that it always works.The other benefit of potatoes is that there are so many ways in which it can be made,it works with all kinds of cuisine.

Last week on one such occasion when I was planning to entertain and inevitably one of the dishes being planned turned out to be something with potatoes I thought of making it as aloo matar (peas and potatoes ). Authentically Aloo matar is from the northern part of India and is usually a gravy based dish that is flavored by garam masala.Some variants of this dish include either a little cream or yogurt too.

For a change I wanted to try and vary the spices used in making this dish as I was not very much in the mood for a gravy flavored by garam masala and also wanted to exclude the cream and I am glad I did..so much so that I think I may not go back to making aloo mutter in the old style again.........maybe....but then again who knows for sure....

Ingredients and Method to make the Aloo Matar curry

6 cups of white potatoes peeled and cubed (approximately 6 to 8 large potatoes)
3 cups peas
3 small tomatoes (chopped finely)
1/4 tsp turmeric
1/2 tsp chili powder (or according to taste)
salt to taste

2 tbsp oil
handful of cilantro cut fine for garnish.
water as required to achieve desired consistency

To grind into paste for the for the masala paste

1 yellow onion
1 tbsp khus khus
1 tbsp coriander seeds
15 peppercorns
1 1/2 tsp cumin seeds
1 inch ginger
4 red chillies (or according to taste)
1 clove
1 tbsp grated coconut
1/2 tsp minced garlic

Grind all the items mentioned for the masala paste into a fine paste. For this, powder the dry ingredients first until it is almost fine powder, then add the onions and other wet ingredients and grind to a smooth paste adding water if required to move the blades. Keep this paste aside.

Cook the peeled and cubed potatoes on the stove top or the microwave for a few minutes so that it is almost cooked. I do this in the microwave by sprinkling a few drops of water and cooking for a few minutes.

Heat oil in a large heavy bottomed pan and add this ground paste to it and saute for three to four minutes until the paste is almost dry on medium heat. Take your time with this step to ensure that the onion loses its raw taste in this process.

Add the chopped tomatoes and saute until the tomatoes are softened.

Add turmeric powder,chili powder, semi cooked potatoes and green peas.

Mix well, add water and salt and simmer until the peas are soft and cooked.

Garnish with chopped cilantro.Serve hot with rice or roti's

Notes:
In case you like the gravy to be on the thinner side increase the quantity of water.
You can easily halve this recipe to make a smaller quantity.
Serves about 6

Potato Curry with Flax and Quinoa

Before I became aware of concepts like cutting carbs to lose weight , potatoes was one of my favorite vegetables and used to feature regularly in my kitchen. They also functioned as my favorite fall back plan, either when I ran out of ideas or the vegetable drawer in my refrigerator started to get empty. Unfortunately as is the case with many other foods I like...., potatoes too are neither very diet friendly nor superlatively healthy. So it rarely appears in my menu now and even when it does, it is included along with a chock full of other vegetables that satisfy my need for nutrition.

Yesterday though, I had a serious craving for some type of potato curry that I could use as filling for sandwiches that I planned for lunch. My mind refused to budge from the idea of making potatoes, so I decided to try and make it as nutritious as possible. And what can be more nutritious than a combination of sesame, flax, quinoa and peanuts. I dry roasted each of these along with other spices, powdered it and used it to spice up my curry. I absolutely adored how this curry turned out, it was very subtly flavored and tasted fantastic in sandwiches.I am sure this will taste just as good as a side for rice and dhal or stuffing for parathas (Stuffed Indian flat bread) or just to go with plain chapathis or rotis (Indian flat bread)

Ingredients and Method to make Potato Peas curry with flax and quinoa

4 medium white potatoes cooked and mashed (Yielded 2 cups of mashed potatoes)
1 cup green peas (either fresh or frozen)


For the ground spice mixture
3 tbsp raw or roasted unsalted peanuts
3 tbsp quinoa (see notes)
4 tbsp brown sesame seeds
1 1/2 tbsp coriander seeds (dhania)
3 tbsp flax seed meal (powdered flax seeds ) (see notes) ( also known as Alsi)
3 dry whole red chillies (or according to taste)
1/2 tbsp cumin seeds

2 tbsp oil
1 tsp cumin seeds

1/4 tsp turmeric powder
salt according to taste (I used approximately 1 1/4 tsp salt for this quantity)

Cook the potatoes with their skin either in a pressure cooker or on the stove top. Cool slightly, skin the potatoes and mash it roughly. This yielded me about 2 cups of mashed potatoes

In a heavy bottomed pan dry roast each of the ingredients mentioned in the ground spice mixture until it turns reddish/ brownish and exudes aroma. If using roasted unsalted peanuts skip the roasting for the peanuts. Keep the roasted ingredients aside to cool thoroughly.

In the same heavy bottomed pan, heat oil and add cumin seeds to it. When the cumin seeds splutter, add turmeric powder and green peas to it and saute the green peas until it is soft and cooked but not mushy. ( I used frozen thawed green peas so it cooked within a few minutes, fresh green peas may take a little longer to cook. If using fresh green peas sprinkle a little water to cook it faster)

Powder the roasted spices in a spice grinder until it turns into a fairly fine powder and keep aside.

Let this mixture cook for a few minutes until all the flavors blend.

Serve hot with Indian flat bread (roti's) or as a side dish with rice or use it as a filling in sandwiches (as I did.... )

Serves approximately 4

Notes

In case you do not have quinoa try using 1 1/2 tbsp of flax seed/ flax seed meal and 1 1/2 tbsp sesame seed in its place

I used flax seed meal (powdered flax seeds) because I had that available, you could just as easily use flax seeds and powder it fine along with the other spices

Sweet Potato and Peas in coconut gravy curry (Kootu) and an interesting fact about bananas...

An interesting fact that I came across recently about bananas, is that they are loaded with resistant starch, a healthy carb that fills you up and speeds up your metabolism. Cool huh?  This is definitely one more very good reason to grab a banana when we are hungry I guess.....for more reasons read this post.  To know more about other foods with resistant starch in them read this wiki article.  Also here is another detailed article on how resistant starch is different from regular starches and how it aids in weight loss.

Moving on, kootu usually refers to a curry from south Indian cuisine, that is made with a coconut based gravy. I have tried  a lot of vegetables in this style of curry including asparagus, red swiss chard and cabbage , but I have never tried sweet potatoes in this style of curry. When my mother in law suggested this variation of kootu the other day, I was very keen to try it. Luckily all the items required for this curry are staple pantry items and I tried this the very next day after our conversation.

The verdict.... this sweet potato curry was just loaded with flavor. The combination of sweet, spices and coconut flavor was just irresistible and the curry was so delicious that I could have eaten bowlfuls of this curry on its own if I wanted.... :-)  If sweet potatoes are on your menu this week, give this curry a try and enjoy its pleasantly unique taste:-)

Ingredients and Method to make Sweet Potato peas in coconut gravy curry
2 large sweet potatoes (Meethe aloo/sakkarai vellikizhangu) peeled and cut into 1/4 inch cubes (yielded 4 heaped cups of cut pieces)
2 cups frozen peas (matar/pachai pattani) (thawed to room temperature) (see notes)
2 large tomatoes cut fine (tamatar/thakkali) (yielded 2 cups of tomatoes)
1/4 tsp turmeric powder
salt to taste

For the masala
2 tsp (preferably coconut oil)
1 tbsp split black gram lentil (udad dhal/ ulatham parappu)
1 tsp cumin seeds (jeera/jeeragam)
1 tsp coriander seeds (dhania)
2 tbsp sesame seeds (brown variety) (til/ ellu)
2 dry red chilies or to taste (lal mirch/ molaga vathal)
1/2 cup freshly grated coconut (nariyal/thengai) (can be substituted with frozen grated coconut thawed to room temperature

Optional seasoning
2 tsp oil (preferably coconut)
1 tsp mustard seeds (rai/ kadagu)
1/8 tsp asafoetida powder (hing/perungayam)
1 stalk of curry leaves

In a heavy bottomed pan heat 2 tsp oil and add black gram lentil and stir on low to medium low heat until it gets reddish. Then add cumin and coriander seeds and stir for a few seconds. Add sesame seeds and stir for a few seconds. Then add red chili and saute until it starts to turn color. Remove these items and place on a plate to cool. Add grated coconut to the balance oil and roast until it turns light golden color. Remove and grind to a fine paste along with the other spices in a chutney attachment/ spice grinder adding a little water as required

Add tomatoes, turmeric powder and water (approx 1/2 cup) on heat and allow the tomatoes to cook until soft and mushy. Add sweet potatoes and peas, salt to taste and some more water ( I used approx 1 cup) and allow the vegetables to cook on medium heat. This does not take very long, just a few minutes.

When cooked, add ground paste, water as required to achieve required consistency and allow the curry to simmer for a few minutes until the flavors blend a little.

If seasoning,  heat 2 tsp oil in a small pan. Add mustard seeds, when it begins to splutter add asafoetida powder and  curry leaves torn into little pieces. Curry leaves splutter in the oil and can cause some of the oil to splatter, so be careful when doing this and keep your hands and face away from the oil. When the curry leaves begin to get whitish spots, remove and pour entire seasoning on the curry.

Remove curry from heat and serve hot with rice and rasam or sambar or even to go with phulkas, rotis or any other type of Indian flat bread.

Notes:
Fresh green peas can be substituted in place of frozen peas. If you do, cook the fresh peas separately until almost cooked and then proceed with the rest of the recipe
